Philippe The Original, located in Los Angeles, not only makes their famous and delicious French Dip sandwiches, but they sell their Philippe’s Hot Mustard in restaurant and online.

Andrew Binder, fourth generation partner and manager at the restaurant, says that they make close to 100 gallons of mustard a week in the kitchen. The mustard has been sold at the current Alameda Street location since the late 1950’s.
“A few select people make it, including our cooks and myself,” said Binder. “The method is passed down, as there really aren’t recipes for it (Elias taught me). Of course we have one written upstairs, but all the people who make it are taught the “old school” way.” If you wanted to replicate this recipe, get some psychic powers to obtain it, because Philippe’s won’t give it to you.
Elias Barajas, a longtime employee and 25-year manager, recently retired after 48 years of working for Philippe’s and with three generations of family partners. Philippe’s makes sure that their secrets and recipes are in trusting hands.
No changes have been made since the mustard was first started, except storage from a glass jar to a plastic flip top squeeze bottle. As for its uses, Binder has a few suggestions.
“People use the mustard on sandwiches primarily at home, but I know of people who make tuna, deviled eggs, marinade, and much more,” said Binder. “The most interesting was some sashimi with a soy sauce and Philippe’s mustard concoction.”
